刘宝玲 张光新 周泽魁浙江大学控制科学与工程学系,浙江杭州310027摘 要:为更好的满足纯生啤酒无菌化生产的要求,研究了纯生啤酒发酵温度的无菌化测量及控制方法.利用有限差分方法分析了罐内温度场径向分布的情况,基于此分析建立了壁面温度T0和发酵罐内0.2
m处温度T0.2间关系的知识库,将此知识库用于发酵温度控制.经实验证明,取得了较好的控制效果,误差在±0.3 ℃之间,验证了壁面测量在工业应用中的可行性.[著者文摘]

The Study of Germfree Measurement and Control for Feimentation

production in draft beer process, the germfree measurement
and the corresponding control method for fermentation temperature
were studied, Based on the analysis of the radial temperature
distribution by the finite difference method, the knowledge
database about the relationship between the measurement
parameter T0 (wall temperature) and the target parameter
T0.2 (the temperature within the fermentation tank in 0.2
m from the wall) was established, It was effectively applied
in the experimental control system on the basis of T0 with
the satisfactory result and error within ± 0.3 ℃.[著者文摘]
